Ai & Om Knives is a cut above your average knife store.
With Halloween just around the corner, it was a pleasure to discover Ai & Om, a fabulous little knife store in the heart of Chinatown.
Sharp and stylish, the shop is stocked with over 100 Japanese-made cutting tools from cleavers to sushi knives to little kitchen stillettos, Ai & Om is where Douglas Chang, formerly a chef at Sai Woo, West, and Bambudda here in Vancity, Eleven Madison Park in New York City, and Splendido in Toronto, sharpens his skills at… well, sharpening.
In fact, on rainy days, you can often find him slowly keening the edges on one of several special whet stones.
With hand-hammered blades and hand-carved handles and prices that range from $65 to a whopping $5,000 for a one-of-a-kind implement, these choppers for serious slicers.
