Famed Belgian chef Nico Schuermans (from London’s Savoy Hotel) has made Chambar a must-try destination for tourists and Vancouver’s glitterati alike. Chambar offers inventive cuisine in a sexy warehouse conversion that proudly displays its exposed brick and original wood beams as a backdrop for hanging chandeliers, modern art, and a sexy red-leather lounge, perfect for a little pre-dinner seduction.
Speaking of seduction, in addition to their extensive imported beer list, Chambar is known for one of the most exotic cocktail lists in the city. Don’t be afraid to try their famous Blue Fig martini, served with gin-infused figs and blue cheese. Everything tastes better with blue cheese.
It’s almost obligatory to start with one of the three versions Moule Frites. For the non-French amongst us, that’s mussels and fries. Granted, the French version sounds exceedingly more exotic, but no matter which language you pronounce them in, they are amongst the best you’ll find this side of Brussels.
Paying homage to his Belgian roots, Chef Schuermans’ menu is full of things you probably won’t be able to pronounce, like Ombre de l’Arctique aux Lentilles (crisp arctic char, za’atar & brown butter french lentil ragout with vegetable brunoix). Anything that hard to say has to be fantastic.
Belgium: it’s not just for waffles anymore.
